Plant Protein Muffins sugar-free and gluten-free

To all my vegetarian, plant-loving friends I made a sugar-free, gluten-free, low carbohydrate and protein-packed muffin that tastes great! These plant protein muffins are green but don’t let that scare you they are supposed to be. It almost feels like you are getting a treat, but without the crazy blood sugar spike!

Heres how we do it!

Step 1: Find a medium and small bowl

Step 2: Gather up the following ingredients

1/2 cup almond butter

1/2 cup pumpkin

1 scoop plant protein

1/2 cup flaxegg

1/4 cup unsweetened almond milk

Stevia

1 tsp vanilla extract

1/2 tsp baking powder

Step 3: Spray muffin tin and start to preheat oven to 350 degrees.

Step 4: In a medium bowl combine all ingredients except baking powder and protein powder. In another small both mix protein powder and baking powder. Combine the two bowls and stir until mixed well.

Step 5: Pour contents into muffin tin evenly and bake for 10-13 min or when checked the toothpick comes out clean.

There is approximately 70 calories per muffin and 4 grams of protein. I usually have two for a snack in the afternoon. They even taste great after being frozen and thawed out. This is a great way to avoid over-snacking. Take out one or two at the beginning of the day to thaw out so you can’t go back for more.
