Black Bean Salad – Sunday Meal Prep Idea

This salad is so perfect for the beginning of the week meal prep or for a weekend barbecue. You can munch on it anytime and it stores in the fridge or cooler really well. It’s a fun salad because you can make it different every time with a variety of spices or added vegetables. Here is the salad I made this weekend!

1 can black beans
1/2 medium white onion
1 tomato
1 cup shredded cabbage
1 can corn
Juice from 1 lime
1/2 chopped jalapeno – use pickled nacho jalapeno’s for less spice
1 Tbsp garlic
1/2 tbsp chili powder
1/2 tbsp cumin
Add cilantro, salt and pepper to taste
Top with avocado

Mix together and enjoy!
